Είναι ημίσκληρο στην υφή, αλλά και εύτριπτο, ενώ η γεύση του αποπνέει τη φρεσκάδα του γάλακτος.
Ο συνδυασμός του, στην περίπτωση του νέου τυριού, με το Prosecco και τα βατόμουρα, οδήγησαν σε μια γλυκόξινη γεύση, όπου η οξύτητα των φρούτων και του οινοπνεύματος, μετριάζει τη «γαλατίλα» του πλούσιου τυριού.
