Τι είναι η ζάχαρη;
Πριν ξεκινήσουμε ας ξεκαθαρίσουμε τι είναι η ζάχαρη. Με τον όρο «ζάχαρη» αναφερόμαστε στην κρυσταλλική, επιτραπέζια ζάχαρη, που προσθέτουμε στον καφέ ή τα γλυκά και η επιστημονική της ορολογία είναι σουκρόζη (ή σακχαρόζη). Η ζάχαρη παράγεται στα φυτά (ζαχαρότευτλο ή ζαχαροκάλαμο) μέσω της διαδικασίας της φωτοσύνθεσης από διοξείδιο του άνθρακα (CO2) και νερό (Η20) και με τη βοήθεια της ηλιακής ενέργειας.
Τα «κρυφά» σάκχαρα
Ωστόσο, στα σάκχαρα δεν είναι ανήκει μόνο η κοινή ζάχαρη, αλλά πολλοί διαφορετικοί τύποι απλών χημικών δομών υδατανθράκων (γλυκόζη, φρουκτόζη, μαλτόζη, λακτόζη κ.λπ.), που είτε απαντώνται φυσικά σε διάφορα τρόφιμα όπως φρούτα, λαχανικά και γαλακτοκομικά προϊόντα, είτε προστίθενται από τους παρασκευαστές στα τρόφιμα κατά τη διάρκεια της επεξεργασίας ώστε να επιτελέσουν σημαντικές λειτουργίες.
Θα τα συναντήσουμε με τις εξής ορολογίες:
• σιρόπι γλυκόζης ή σιρόπι γλυκόζης-φρουκτόζης
• σιρόπι από (λευκό ή καφέ) ρύζι
• σιρόπι σφενδάμου
• σιρόπι καρύδας
• σιρόπι / νέκταρ Αγαύης
• σιρόπι βύνης
• σταφυλοσάκχαρο
• ραφιναρισμένο σιρόπι
• μελάσα
• φρουκτόζη
• ιμβερτοσάκχαρο
• μέλι (*παρουσιάζει ωστόσο αντιοξειδωτική και αντιμικροβιακή δράση)
• αλκοόλες σακχάρων (μαλτιτόλη, μανιτόλη, ξυλιτόλη, ισομαλτόζη, σορβιτόλη, ερυθριτόλη και υδρογονωμένο άμυλο)
• ζάχαρη Turbinado
• χαρουπόμελο
• δισακχαρίτες
• καραμέλα
• συμπυκνωμένος χυμός φρούτων
• βύνη κριθαριού
Γιατί προστίθενται σάκχαρα στα τρόφιμα;
• Προσδίδουν γλυκιά γεύση
• Προσδίδουν υφή, όγκο και χρώμα σε αρτοσκευάσματα που ψήνονται
• Βοηθούν στη συντήρηση (μαρμελάδες, ζελατίνες)
• Ενισχύουν τη ζύμωση της μαγιάς
• Βοηθούν στη ζύμωση των σακχάρων με παράγωγο την αιθανόλη, κύριο συστατικό των αλκοολούχων ποτών.
Ποιοι οι κίνδυνοι για την υγεία μου;
Αν και δεν έχει αποδειχτεί άμεση αιτιολογική σχέση της κατανάλωσης ζάχαρης με την ανάπτυξη χρόνιων μεταβολικών νοσημάτων όπως παχυσαρκία και διαβήτης, γνωρίζουμε τα εξής: τα τρόφιμα που περιέχουν ζάχαρη είναι πιο εύγεστα από τα συμβατικά με αποτέλεσμα να οδηγούμαστε σε κατανάλωση μεγάλων ποσοτήτων αυτών, κάτι που σταδιακά οδηγεί σε αύξηση του σωματικού βάρους. Επίσης, για τα άτομα με διαβήτη ελλοχεύει ο κίνδυνος δυσκολίας ρύθμισης του σακχάρου, καθώς τα γλυκά τρόφιμα οδηγούν σε απότομες αυξομειώσεις του σακχάρου. Τέλος είναι γνωστό ότι η κατανάλωση ζάχαρης μπορεί να προκαλέσει τερηδόνα, και η συχνότητα κατανάλωσης, παρά η ποσότητα, είναι το κύριο θέμα.
Σύσταση
Ο Παγκόσμιος Οργανισμός Υγείας συνιστά τα απλά σάκχαρα (όλοι οι μονοσακχαρίτες και οι δισακχαρίτες που προστίθενται στα τρόφιμα από τον παρασκευαστή, το μάγειρα και τον καταναλωτή, καθώς και τα σάκχαρα που βρίσκονται φυσικά στο μέλι, τα σιρόπια και τους χυμούς φρούτων) να μην ξεπερνούν το 10% της ημερήσιας ενεργειακής πρόσληψης, κάτι που ισοδυναμεί περίπου με 200 θερμίδες.
Δεδομένης όπως προείπαμε της συνεχούς προσθήκης σακχάρων σχεδόν σε όλα τα τρόφιμα, συμπεριλαμβανομένων των γαλακτοκομικών προϊόντων, χυμών φρούτων, δημητριακών πρωινού (με τις νιφάδες βρώμη να αποτελούν τη μοναδική εξαίρεση), συστήνεται στους καταναλωτές να μην προσθέτουν επιπλέον ζάχαρη στα τρόφιμα που καταναλώνουν.
Εναλλακτικές, ασφαλείς επιλογές είναι τα φυσικά (στέβια) ή τεχνητά γλυκαντικά (ασπαρτάμη, σουκραλόζη, ακετοσουλφαμικό κάλιο), όμως και αυτά καλό είναι να καταναλώνονται με μέτρο.
